In my opinion, macarons have a texture like none else. A perfect macaron has a smooth eggshell-like exterior that, when broken open, reveals a light, fluffy interior. With a plethora of different recipes and techniques available, making macarons can be somewhat finicky. We found that this method, which includes making an easy sugar syrup, gives very consistent results. Parchment or non-stick foil are a necessity.

A macaroon (/ m æ k ə ˈ r uː n / mak-ə-ROON) is a small cake or cookie, typically made from ground almonds (the original main ingredient), coconut or other nuts (or even potato), with sugar and sometimes flavorings (e.g. honey, vanilla, spices), food coloring, glacé cherries, jam or a chocolate coating – or a combination of these or other ingredients. Remove macarons from oven, and let cool on baking sheet set on a wire drying rack for 15 minutes, then transfer macarons directly to wire rack and continue cooling. Pipe or spread Filling onto 1 macaron, and top with a similar size macaron. Serve immediately or store in an air-tight container up to 2 days.
